This marinade proves to be tangy and sweet with a smoky, chipotle spice. Add to stir fried diced pork and serve in tacos, cook with fish and serve with rice, or slow cook with chicken and kumera.  Tamarind is popular in many Mexican dishes and piloncillo sugar cones sweeten with a bit of a molasses flavour.
