Mexican Style Dukkah

Ingredients:

50g Tio Pablo Spicy Roasted Peanuts
35g Tio Pablo Pepitas (roasted pumpkin seeds)
1 Tbl sesame seeds
1 Tbl black sesame seeds
1 tsp coriander seeds
¼ tsp ground cumin
¼ tsp Tio Pablo Citrus Chilli Salt
½ tsp Tio Pablo Mexican Oregano
½ tsp coarse black pepper

Directions:

In a small frying pan, gently brown sesame seeds and coriander seeds. Set aside and let cool

 

In a mortar and pestle, mash the peanuts and pepitas until roughly ground. Add the sesame seeds and coriander seeds and grind to blend through. Add remaining ingredients and mash through until mixture is relatively consistent.

 

Sprinkle onto avocado, fried eggs, or olive oil-coated pide bread.
