Fry corn tortillas in
hot canola oil |
Let tortillas drain on a
paper towel |

Coat the fried tortillas with
enchilada sauce |
Pour enchilada sauce along bottom of baking dish and line with coated tortillas |
Prepare veggies and
coriander and grate
tasty cheese |

Add a layer of grated cheese to the tortillas |

Add another layer of
coated tortillas |

Continue to layer the cheese, veggies and coated tortillas |
Top with remaining enchilada sauce and cheese, and bake in the oven at 200 degrees

Bake for about 20-25 minutes and serve with rice, refried beans and fresh avocado
