Tío Pablo Layered Vegetarian Enchiladas
Fry corn tortillas in
hot canola oil
Let tortillas drain on a
paper towel

Coat the fried tortillas with
enchilada sauce
Pour enchilada sauce along bottom of baking dish and line with  coated tortillas
Prepare veggies and
coriander and grate
tasty cheese
     
Add a layer of grated cheese to the tortillas
Add a layer of veggies
Add another layer of
coated tortillas
     
Continue to layer the cheese, veggies and coated tortillas
Top with remaining enchilada sauce and cheese, and bake in the oven at 200 degrees
Bake for about 20-25 minutes and serve with rice, refried beans and fresh avocado
