Bittersweet Chocolate Tamales
Delicious with ice cream

INGREDIENTS

6 cups Basic Fresh Masa
1/3 cup packed light brown sugar
2 teaspoons vanilla extract
12 large dried corn husks, soaked washed and drained, plus more for ties
2 cups premium semisweet chocolate chips
2 cups fresh whipped cream (optional)


DIRECTIONS

  1. Prepare the masa.
  2. In a large bowl, combine masa, brown sugar, and vanilla until well blended
  3. To assemble the tamale, place 1/2 cup of masa in the centre of the smooth side of a corn husks.
  4. Using the back of a wet tablespoon, make an indentation in the center of the masa and fill with 1 1/2 tablespoons or more of the chocolate chips.
  5. Fold both sides of the husk tightly over the masa mixture and tie at both ends.
  6. Repeat for remaining tamales.
  7. Steam the tamales for 55 minutes. Serve plain or with whipped cream.
